Powdered Banana Donuts

Sometimes, when I play around in the kitchen, recipes just take on a life of their own. I started with some mashed bananas and attempted to make funnel cake in the spirit of festival food. That didn't work. I moved on to pancakes, but realized I had no syrup nor any fruit to make fresh jam. Hmm. Out of the corner of my eye I saw my deep fryer sitting by its lonesome and with some adjustments, Powdered Banana Donuts were on their way!!  Small-in-size and bouncy to the touch, these donuts were a quickly consumed treat.

Ingredients
Servings: ~30 donuts
Prep Time: ~15min

8oz Ripened Bananas, Mashed
1 1/2 Cups All-Purpose Flour
1 Tbsp Baking Powder
1 1/2 Tsp Baking Soda
1/3 Cup Sugar, Granulated
1/4 Cup Nonfat Milk
1 Egg
1 Tsp Vanilla Extract 
2 Tbsp Butter, Melted
1/3 Cup Confectioners Sugar

Preheat oil to 350 degrees
[if no deep fryer is available, fill a large pot to 1" deep with vegetable oil]

Donuts: In a small bowl, mash up the bananas with a fork until smooth; set aside. In a medium sized mixing bowl, combine dry ingredients with milk, vanilla extract and melted butter. Fold in the mashed bananas. Drop by spoonfuls into the heated oil. Donuts will puff. Turn over until each side is golden. Set aside on a paper towel to drain and cool.

Powder: When slightly cooled, lightly toss donuts into the confectioners sugar and rotate with a spoon until evenly coated. Enjoy warm, enjoy cool - these things are hard to put down!
