Stuffed Meatballs, Giant

Well it's the new year - a time where you may want to simplify what goes into the body - and this could be a great higher protein snack before planning the next cheat meal. It's a simple concept and more of a shortcut than a recipe, but a Giant-sized Stuffed Meatball is certainly a meal in itself or a great addition to one (stuffed meatball hoagie, open-faced stuffed meatball sandwich, or classic spaghetti with stuffed meatballs?!). However it is served up, this is an easy recipe to put together before the day is started and pop in the oven after the day is done!

Ingredients
Prep Time: ~10 min
Servings: 2 meatballs

1oz Cream Cheese, room temperature
2 Garlic Cloves, minced
10oz Beef, Ground, 93% Lean
Spices - spice it for how you want it!!

Preheat oven to 375 degrees.



Fold the cream cheese with the minced garlic and chill until it hardens. Spice up that meat with...well whatever you like. I go simple, adding in finely chopped onions, garlic, and a dash of beef bouillon powder and a bit of crushed black pepper (not ground). Cut the meat in two and flatten into burger patties. Roll the cream cheese into two balls, and press into the center of each patty. Pulling up and around, wrap the ball around the ball of cream cheese and seal it at the top by pressing the meat together. In a lightly greased pan or mini-loaf pan, turn the balls upside down and press into the pan side-by-side. Bake uncovered at 375 degrees for 30-35 minutes. 


Again, this is more of a shortcut than a recipe and is open for modification: add BBQ or ketchup to the top as it bakes, maybe chop up kale and fold it into the meat, or crisp some bacon and fold into the cream cheese, or use goat cheese instead of cream cheese, or lightly press the meatballs into grated parmesan and lightly fry the outside on the stove before baking, or use ground turkey or chicken (time and temp may need to adjust), or...However it's done, enjoy it!
