Pudding Cake with Blueberry Jam

What exactly IS pudding cake? I have seen it scrolled along the face of cake boxes, taunting me with the image of a rather yellow and 'moist' cake. From what I understand: pudding is folded into the mixture to moisten its outcome with the subtlest of texture differences. I can do this. Rather, I WILL do this. I put together my version of a Pudding Cake, using the moisture from the pudding to the cake's advantage, and topped it off with a layer of Blueberry Jam I made as it baked. The cake remained incredibly moist out of the oven (success!) and I served it warm with a bit of chilled pudding alongside. Enjoy!

Ingredients
Prep Time: ~1hr
Servings: ~16 slices

Cake
2/3 Cup Butter, Unsalted
3/4 Cup Sugar, Granulated
1 Egg
1 Tsp Vanilla Extract
1 1/4 Cup Vanilla Pudding
(+ 3/4 Cup chilled for serving)
2 Cups Flour, All-Purpose
2 Tsp Baking Powder
1 Tsp Baking Soda
1/4 Tsp Salt

Blueberry Jam














Pudding: Make half of the Vanilla Custard recipe, and set aside to cool to room temperature (combine the heated mixture slowly to the cooled egg mixture until warm; pour the warm egg mixture with the heated mixture; stir furiously for two minutes on medium-high; reduce to low for five minutes and remove from heat).

Preheat oven to 350 degrees.


Cake: In a large mixing bowl, cream the butter, sugar, eggs, and vanilla. Fold in the cooled pudding. Mix in the flour, baking soda, baking powder, and salt. After thoroughly mixed, pour batter into a greased and floured 9" circular baking pan. Bake at 350 degrees for 30-35 minutes, or until inserted knife comes out clean. Note - a 9" springform was used.







Blueberry Jam: Merely a serving suggestion, a batch of Blueberry Jam paired perfectly as a topping with this pudding cake. The jam can be made quickly while the cake is baking. After the cake has cooled and been removed to a serving dish, spread a layer along the top, cut into sixteen triangles, and enjoy!
