Banana Walnut Cookies

Do you smell that? Do you? Banana Walnut Cookies will fill the house with the comforting aroma of a freshly baked banana bread, a parallel to a batch of chocolate chip cookies in the oven. Inspired from the many banana breads I've eaten over the years, I put together this cookie treat. It offers portability along with a crunchy/soft combination and the essence of a banana walnut bread.  Fresh out of the oven, with a morning cup of coffee, or a bite along the route to work, eat it when you want it and take comfort in its taste. Ingredients
Prep Time: ~15 min
Servings: ~40 cookies

1 Cup Butter, unsalted
1 Cup Brown Sugar, packed
1/3 Cup Sugar, granulated
1 Egg
2 Tsp Vanilla Extract
1 1/2 Bananas, 6", diced
2 1/3 Cups All-Purpose Flour
1 Tsp Baking Powder
1/2 Tsp Baking Soda
1/2 Tsp Salt
3/4 Cup Walnuts

Preheat oven to 325 degrees.



In a large mixing bowl cream the butter and sugars. Mix in the egg, vanilla, and bananas. Mix in the flour, baking powder, soda, and salt until fully integrated. Fold in the walnuts. Using a teaspoon, or disher, scoop a heaping spoonful of dough and space about 1" apart on a non-greased cookie sheet. Bake at 325 degrees for 18-22 minutes, until golden at the edges. Set aside to cool.
