Zesty Cilantro Pesto


Seeking a new way to season an otherwise dull dinner or to amp up an already amazing dish? This Zesty Cilantro Pesto will add a little 'zesty' flare to those savory dishes with a kick of spice and a mouthful of flavor! How did I use it? Heated and drizzled over a homemade batch of chicken ravioli for an absolutely delicious finish! Now it's your turn!*

Servings: ~1/2 to 3/4 Cup
Prep Time: 10 min

1 Bunch of Cilantro
1/2 Bunch of Green Onions
1 1/2 Tbsp Chopped Garlic
Juice of 1/2 Medium-Sized Lime
1/2 Tsp Cayenne Pepper, ground
Optional: 1 Tbsp Parmesan Cheese, grated
3-5 Tbsp Extra Virgin Olive Oil
1/2 Tsp Salt + 1/2 Tsp Black Pepper, ground

Process the cilantro, green onions, garlic, lime juice, cayenne pepper, and parmesan cheese in a food processor until smooth. With the processor on its lowest setting, add 3 Tbsp of the extra virgin olive oil with the salt and pepper. If desired, drizzle in the remaining oil for a thinner consistency. Use this delicious pesto as a sauce (for pasta), topping (for pizza), or seasoning (for meats), but most of all: ENJOY!!

*Tip: Easy to make and even easier to modify! Kick up the heat with a fresh Serrano chili or enjoy a creamier consistency by processing 2 Tbsp of Sour Cream (Crema) into the mix!
