Chocolate Stuffed Pound Cake Bites


If you loved the Cream Cheese Pound Cake, then you may love this one a bit more. This alteration takes the same recipe and repackages it for a tasty morsel of sweet. The miniaturized Chocolate Stuffed Pound Cakes are baked in a miniature muffin tin, with a piece of chocolate placed into the center of each. It makes for a  great bite-sized surprise for those not wanting to commit to a full slice of a cake. Enjoy!!

Ingredients
Servings: 60 muffins
Prep Time: ~30min

1 Cup Butter, unsalted, softened  
8oz Cream Cheese, softened
2 1/2 Cups Sugar
5 Eggs, large
2 Tsp Vanilla Extract 
3 Cups Cake Flour
Salt, pinch

Preheat oven to 325 degrees.




Cream the butter, cream cheese, and sugar.  Add the eggs and vanilla. Slowly integrate the cake flour and salt. Spoon teaspoons of the batter into a greased and floured miniature muffin tin until each form is about 1/3 full. Place a chocolate morsel, kiss, or other delicious candy into the center of each, and place another spoonful of batter on top to cover. Bake at 325 degrees for 16-18 minutes, or until an inserted knife comes out clean. Set aside to cool.
