Chocolate-Frosted Brownies






Oh chocolate, what else can I do with you? I made Spiced Fudge Brownies previously with a little heat - adding a note that most guests wouldn't expect in a brownie. It was tasty, especially with the creamy macadamia nuts in the mix. This time around I went for something a bit more decadent, and unnecessarily so...but the result was something that caused a salivation in my friends I didn't anticipate. Sadly, I only cooked up a batch of one and within a few hours all were gone!

Ingredients
Prep Time: ~25 Minutes
Servings: 12 Brownies

Brownies
4 Squares Baking Chocolate, Unsweetened
1 3/4 Cups Sugar, Granulated

2/3 Cup Vegetable Oil
1 Teaspoon Vanilla Extract
1/2 Teaspoon Baking Powder 
1 1/4 Cups Flour, All-Purpose
2 Eggs

Chocolate Frosting
2 Squares Baking Chocolate, Unsweetened
1/3 Cup Butter, Unsalted
1 Teaspoon Vanilla Extract
1 1/2 Cups Confectioner's Sugar

Preheat oven to 350 degrees.

Brownies: In a medium saucepan, melt chocolate while stirring frequently and remove from heat. Mix in the oil and sugar until well-integrated and set aside. Sift together flour and baking powder. Whisk in eggs. Thoroughly stir in the melted chocolate mixture. Pour into a floured 9"x 9" square baking pan. Bake at 350 degrees for 30 minutes, or until inserted knife comes out clean. Set aside to cool.

Frosting: Melt chocolate in microwave with butter. Stir in confectioners sugar and vanilla until the thick frosting forms. Cut brownies into 12 squares, then frost (or serve adjacent to brownies for self-service). NoteTake care to not overheat chocolate, as it may burn depending on the heat settings.
