Almond Butter Truffles


A cook rarely complains when any particular dessert is incredibly easy to make, especially with a party on the horizon. These Almond Butter Truffles are a simple morsel of confection offering up what their name suggests: almond butter pressed into a rich chocolate. Served chilled, these truffles are lightly sweetened mouthfuls for dinner guest enjoyment. Enjoy!!

Ingredients
Prep Time: 20min / 1hr 20min
Servings: 16 1" cubes

2 Cups Sliced Almonds, processed
3 Tbsp Butter, melted
1 Tbsp Honey
1 Tbsp Powdered Sugar
1 Tsp Almond Extract
Salt, pinch
3oz Chocolate, shaved



In a food processor, blend the sliced almonds until an almond meal forms. Be careful to process for only seconds at a time to avoid overheating. Combine the almond meal with the melted butter, honey, sugar, extract and salt until a pliable dough forms.
  • For Rounds - Form the dough into small balls and toss into the chocolate shavings. Press 1-2 sliced almonds into the tops to decorate and place in the fridge until ready to serve.
  • For Cubes - Press the dough into a 1" ice cube tray and freeze for approx. one hour. Remove from the tray and toss in the chocolate shavings. Set aside until lightly softened and press 1-2 sliced almonds into the tops for decor. Note - if using a standard ice cube tray, just cut the rectangles into halves once hardened.
