Peach Cobbler


Sometimes on those warm, sunny days, you just don't want to share your afternoon treat with anyone. Paired with a refreshing iced tea, an individually portioned Peach Cobbler will satiate any summer afternoon! Each cobbler combines fresh peaches with a cloud of buttery cake, satisfying when served warmed or chilled. Why not brighten the afternoon with a portion for one; what began as yours, can remain yours! Enjoy!!

Ingredients
Prep Time: ~25min
Servings: 8 Individual Cobblers

1/2 Cup Butter, unsalted
3/4 Cup Sugar
1 Egg
1/2 Cup Milk
2 Tsp Vanilla Extract
1 1/2 Cup All Purpose Flour 
1 Tbsp Baking Powder
3/4 Tsp Baking Soda
1/2 Tsp Salt
4 Medium Peaches (12 slices each)
Optional: Sprinkle with Raw Sugar





Preheat oven to 350 degrees.

In a medium bowl, cream the butter and sugar. Mix in the milk, egg, and vanilla. Fold in the flour, baking powder, baking soda and salt. Spread approximately two heaping tablespoons of the batter into 8 lightly greased personal pie tins (~5" diameter). Lightly press six peach slices into the tops. Bake at 350 degrees for 18-20 minutes, or until a golden crust forms along the top. Set aside to cool.
